Make this rich, cheesy chicken dish in one skillet for an easy weeknight dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 4 ounces cream cheese, cubed
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and roughly chopped
  • 0.5 cup grated Parmesan cheese

Instructions

  1. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the cubed cream cheese to the skillet. Pour in the chicken broth and heavy cream. Stir constantly until the cream cheese melts and the sauce is smooth.
  4. Stir in the squeezed, dry spinach and the chopped artichoke hearts. Cook for 2 minutes until heated through.
  5. Stir in the Parmesan cheese until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Cook for 1 to 2 minutes until everything is hot.
  7. Serve immediately.

Notes

  • For a low-carb option, serve this dish over cauliflower rice or alongside steamed broccoli.
  • You can substitute half of the heavy cream with half-and-half if you prefer a slightly lighter sauce.
  • If you want more cheese flavor, add 1/4 cup of shredded mozzarella with the Parmesan.
