1 pound ground beef
1 packet taco seasoning
1 can (15 ounces) diced tomatoes, undrained
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
2 cups water
1 cup uncooked pasta (such as elbow macaroni or rotini)
In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
Stir in the taco seasoning, diced tomatoes, black beans, Rotel, water, and uncooked pasta.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through and most of the liquid has been absorbed, stirring occasionally.
Stir in the shredded cheddar cheese until melted and creamy.
Serve hot, with your favorite taco toppings.
Notes
Feel free to substitute ground turkey or chicken for the ground beef.
Adjust the amount of taco seasoning to your preference.
If the pasta isn’t fully cooked and the skillet is too dry, add a little more water.
