Make this rich and comforting tomato soup featuring cheese tortellini. This recipe is simple and suitable for a quick weeknight dinner.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • Fresh basil leaves, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes, vegetable broth, dried basil, dried oregano, and red pepper flakes if you are using them. Stir well.
  4. Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 10 minutes to allow the flavors to meld.
  5. Stir in the heavy cream and the refrigerated tortellini. Cook according to the package directions for the tortellini, usually about 3 to 5 minutes, until they float and are cooked through.
  6. Remove the pot from the heat. Stir in the 1/2 cup of grated Parmesan cheese until it melts into the soup.
  7. Taste the soup and add salt and black pepper as needed.
  8. Ladle the soup into bowls and garnish with extra Parmesan cheese and fresh chopped basil before serving.

Notes

  • You can substitute chicken broth for vegetable broth if you prefer a different base flavor.
  • For a thicker soup, simmer uncovered for an extra 5 minutes before adding the cream, or stir in 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water just before adding the tortellini.
  • This soup pairs well with grilled cheese sandwiches or crusty Italian bread for dipping.
  • Use spinach tortellini or meat-filled tortellini for a variation.
