  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add minced garlic, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using) to the skillet. Cook for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Return the chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until chicken is cooked through.
  8. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  9. Season with additional salt and pepper if needed. Serve hot.

Notes

  • For a thicker sauce, simmer uncovered for a few extra minutes.
  • You can substitute chicken thighs for chicken breasts.
  • Add other vegetables like mushrooms or bell peppers for extra flavor and texture.
