A flavorful fried rice combining strong garlic notes with the savory spice base of Creole cooking.

Ingredients

  • 3 cups cooked, cold day-old white rice
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup yellow onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup green bell pepper, diced
  • 4 ounces smoked andouille sausage, sliced
  • 2 large eggs, lightly beaten
  • 1/4 cup frozen peas and carrots mix
  • 2 tablespoons soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Creole seasoning blend
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 green onions, sliced for garnish

Instructions

  1. Heat vegetable oil and butter in a large skillet or wok over medium-high heat.
  2. Add the andouille sausage and cook until lightly browned, about 3 minutes. Remove sausage and set aside.
  3. Add the diced onion, celery, and bell pepper (the trinity) to the skillet. Cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  5. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and scramble quickly until just set. Break the eggs into small pieces and mix with the vegetables.
  6. Add the cold rice to the skillet. Break up any clumps with your spatula. Stir fry for 3 minutes.
  7. Stir in the soy sauce, Worcestershire sauce, Creole seasoning, and cayenne pepper, if using. Mix well to coat the rice evenly.
  8. Return the cooked sausage to the pan along with the frozen peas and carrots. Cook until heated through, about 2 minutes.
  9. Taste and adjust seasoning if needed. Serve immediately, garnished with sliced green onions.

Notes

  • Using day-old, cold rice is important for achieving the correct texture in fried rice.
  • You can substitute shrimp or crawfish for the andouille sausage for a different Creole flavor profile.
  • Adjust the amount of Creole seasoning and cayenne based on your preference for heat and saltiness.
