  • 1.5 lbs boneless, skinless chicken breasts, cut into strips
  • 1 cup crushed cornflakes (about 4 cups whole flakes)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly spray a baking sheet with cooking spray or line it with parchment paper.
  2. Set up a standard breading station with three shallow dishes.
  3. In the first dish, combine the flour, salt, pepper, paprika, and garlic powder. Mix well.
  4. In the second dish, whisk the eggs and milk together until combined.
  5. In the third dish, place the crushed cornflakes.
  6. Take one chicken tender and dredge it lightly in the flour mixture, shaking off any excess.
  7. Dip the floured tender completely into the egg wash, letting the excess drip off.
  8. Press the tender firmly into the crushed cornflakes, coating all sides evenly. Press the flakes onto the chicken to help them adhere.
  9. Place the coated tenders on the prepared baking sheet, ensuring they do not touch.
  10. Bake for 18 to 22 minutes, flipping the tenders halfway through the cooking time, until the crust is golden brown and the internal temperature reaches 165 degrees Fahrenheit.

Notes

  • For extra crispiness, you can lightly spray the tops of the coated tenders with cooking spray before baking.
  • If your cornflakes are not crushed finely enough, use a food processor or place them in a sealed bag and crush them with a rolling pin.
  • Use plain, unsweetened cornflakes for the best savory flavor.
