Make crispy panko-crusted cod in the oven quickly for a simple weeknight dinner.

  • 2 (6 ounce) cod fillets
  • 1 tablespoon olive oil
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon melted butter
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Pat the cod fillets dry using paper towels. This step helps achieve crispiness.
  3. Brush the tops of the cod fillets lightly with olive oil.
  4. In a small bowl, mix the panko breadcrumbs, parsley, garlic powder, salt, and pepper.
  5. Press the panko mixture firmly onto the oiled side of each cod fillet to create an even crust.
  6. Place the crusted fillets on the prepared baking sheet.
  7. Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the topping is golden brown and crisp.
  8. While the fish bakes, mix the melted butter and lemon juice in a small dish.
  9. Remove the fish from the oven. Drizzle the lemon butter mixture over the hot fish before serving.

Notes

  • For extra crispiness, you can briefly place the baking sheet under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
  • Use haddock or tilapia as a substitute for cod if needed.
  • Serve immediately for the best texture.
