- 2 (6 ounce) cod fillets
- 1 tablespoon olive oil
- 1/2 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon melted butter
- 1 teaspoon lemon juice
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- Pat the cod fillets dry using paper towels. This step helps achieve crispiness.
- Brush the tops of the cod fillets lightly with olive oil.
- In a small bowl, mix the panko breadcrumbs, parsley, garlic powder, salt, and pepper.
- Press the panko mixture firmly onto the oiled side of each cod fillet to create an even crust.
- Place the crusted fillets on the prepared baking sheet.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the topping is golden brown and crisp.
- While the fish bakes, mix the melted butter and lemon juice in a small dish.
- Remove the fish from the oven. Drizzle the lemon butter mixture over the hot fish before serving.
Notes
- For extra crispiness, you can briefly place the baking sheet under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
- Use haddock or tilapia as a substitute for cod if needed.
- Serve immediately for the best texture.
