1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
Instructions
Pat the shrimp completely dry using paper towels. This step is key for crispiness.
Heat the olive oil in a large skillet over medium-high heat until it shimmers.
Add the shrimp to the hot skillet in a single layer. Do not overcrowd the pan; cook in batches if necessary.
Sear the shrimp for 1 to 2 minutes per side until they turn pink and develop a brown, crispy exterior. Remove the shrimp from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet.
Once the butter melts, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Return the cooked shrimp to the skillet. Toss quickly to coat the shrimp in the garlic butter.
Remove the skillet from the heat. Stir in the salt, pepper, and lemon juice.
Sprinkle with fresh parsley before serving immediately.
Notes
For maximum crispiness, ensure your shrimp are very cold or even slightly frozen when you start cooking, as this slows the initial cooking and promotes searing.
Use high heat for the initial sear, but watch the butter carefully to prevent burning the garlic.
If you need more sauce, melt an extra tablespoon of butter and stir in more garlic at the end.
