- 2 medium yellow squash or zucchini
- 1 large egg
- 1 tablespoon milk
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt

- 1 cup Panko breadcrumbs

- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper.
- Wash the squash and trim off the ends. Cut the squash into sticks, about 3 inches long and 1/2 inch thick.
- Set up a dredging station with three shallow bowls. In the first bowl, mix the flour, salt, and pepper.
- In the second bowl, whisk the egg and milk together until combined.
- In the third bowl, combine the Panko breadcrumbs and Parmesan cheese, if using.
- Dip each squash stick first into the flour mixture, shaking off excess.
- Next, dip the floured stick into the egg mixture, letting excess drip off.
