A simple recipe for making squash sticks crispy in the oven, perfect for a savory snack.

  • 2 medium yellow squash or zucchini
  • 1 large egg
  • 1 tablespoon milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • Cooking spray

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper.
  2. Wash the squash and trim off the ends. Cut the squash into sticks, about 3 inches long and 1/2 inch thick.
  3. Set up a dredging station with three shallow bowls. In the first bowl, mix the flour, salt, and pepper.
  4. In the second bowl, whisk the egg and milk together until combined.
  5. In the third bowl, combine the Panko breadcrumbs and Parmesan cheese, if using.
  6. Dip each squash stick first into the flour mixture, shaking off excess.
  7. Next, dip the floured stick into the egg mixture, letting excess drip off.
  8. Finally, press the stick firmly into the Panko mixture to coat completely.
  9. Place the coated sticks in a single layer on the prepared baking sheet. Do not let them touch.
  10. Spray the tops of the coated sticks generously with cooking spray to help them brown and crisp.
  11. Bake for 10 minutes. Flip the sticks carefully. Spray the second side with cooking spray.
  12. Bake for another 8 to 12 minutes, or until the coating is golden brown and crispy.
  13. Serve immediately for the best texture.

Notes

  • For extra crispiness, let the coated squash sticks rest on the baking sheet for 10 minutes before spraying and baking.
  • Use a wire cooling rack placed on top of the baking sheet for better air circulation around the sticks during baking.
  • Serve with a simple dipping sauce like plain Greek yogurt mixed with garlic powder and dill.
