Make incredibly tender, juicy pulled pork using your slow cooker. This easy recipe uses a simple rub and low heat for perfect shredded meat every time, ideal for meal prep or game day.

  • 4 lb pork shoulder (Boston butt)
  • 1 tablespoon kosher salt
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1 cup your favorite BBQ sauce (for serving)

Instructions

  1. Pat the pork shoulder dry with paper towels. Trim off any large pieces of excess fat.
  2. In a small bowl, mix together the salt, brown sugar, smoked paprika, black pepper, garlic powder, onion powder, and cayenne pepper to create the dry rub.
  3. Rub the spice mixture evenly over all surfaces of the pork shoulder.
  4. Pour the apple cider vinegar and water into the bottom of your slow cooker.
  5. Place the seasoned pork shoulder directly into the slow cooker.
  6. Cover the slow cooker and cook on LOW for 8 to 10 hours, or until the pork is fork-tender and easily shreds. Do not lift the lid during cooking.
  7. Remove the pork from the slow cooker and place it on a large cutting board or baking sheet. Discard any large pieces of fat.
  8. Use two forks to shred the pork completely.
  9. Pour about 1/2 cup of the cooking liquid from the slow cooker over the shredded pork to keep it moist.
  10. Stir in about 1/2 cup of your favorite BBQ sauce, or serve the sauce on the side.
  11. Serve immediately on buns for the best BBQ pulled pork sandwiches or use for meal prep protein.

  • For the juiciest results, aim for an internal temperature of 195 to 205°F before shredding, though the slow cooker method usually guarantees tenderness without a thermometer.
