2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 cup plain Greek yogurt
1/4 cup lemon juice
2 tablespoons grated fresh ginger
2 tablespoons minced garlic
1 tablespoon garam masala
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional)
1 (28 ounce) can crushed tomatoes
1/2 cup chicken broth
1/2 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon salt, or to taste
1/4 cup chopped fresh cilantro, for garnish
Instructions
In a medium bowl, combine the chicken pieces, Greek yogurt, lemon juice, ginger, garlic, garam masala, turmeric, cumin, paprika, and cayenne pepper. Mix well to coat the chicken. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Transfer the marinated chicken mixture to your slow cooker.
Pour the crushed tomatoes and chicken broth over the chicken mixture. Stir gently to combine.
Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender.
About 15 minutes before serving, stir in the heavy cream and butter until the butter melts and the sauce is smooth.
Taste the sauce and add salt as needed.
Serve hot over basmati rice or with naan bread. Garnish with fresh cilantro.
Notes
For a richer sauce, you can skip adding the heavy cream until after the slow cooker finishes. Transfer the cooked chicken and sauce to a pot on the stove, stir in the cream and butter, and simmer for 5 minutes until slightly thickened.
If you prefer shredded chicken, use a fork to shred the chicken directly in the slow cooker before adding the cream and butter.
Serve with basmati rice and warm naan bread for a complete meal.
