- 1 cup (225g) unsalted butter or coconut oil
- 1 cup (200g) granulated sugar
- 3/4 cup (150g) packed light brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup (180g) smooth tahini
- 1/2 cup (60g) unsweetened cocoa powder
- 1/2 cup (60g) all-purpose flour or gluten-free blend
- 1/2 teaspoon salt
- 6 ounces (170g) dark chocolate (70% cacao or higher), chopped
- 1/2 cup (85g) dark chocolate chips (optional)
- Preheat your oven to 350°F (175°C). Line a 9×9 inch metal baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a medium saucepan over low heat, melt the butter or coconut oil. Remove from heat.
- Whisk the granulated sugar and brown sugar into the melted butter until combined.
- Whisk in the eggs one at a time until the mixture is smooth. Stir in the vanilla extract and tahini until fully incorporated.
- In a separate bowl, whisk together the cocoa powder, flour, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
- Fold in the chopped dark chocolate and the optional chocolate chips.
- Spread the batter evenly into the prepared pan.
- Bake for 30 to 35 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
- Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
- Cut into squares and serve.
