Easy Nacho Cheese Dorito Casserole Bake

This is our go-to family friendly casserole dinner, featuring ground beef, creamy sauce, and a crunchy topping made from Nacho Cheese Doritos. It is a quick dinner bake perfect for weeknights.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9.25 ounces) Nacho Cheese Doritos, lightly crushed
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and chopped onion. Cook, breaking up the beef, until the meat is browned and the onion is soft, about 8 minutes. Drain off any excess grease.
  3. Stir the taco seasoning mix into the beef and onion mixture. Cook for 1 minute, stirring constantly.
  4. In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, milk, and sour cream until smooth. Stir in 1.5 cups of the cheddar cheese.
  5. Fold the cooked meat mixture into the creamy sauce.
  6. Spread half of the crushed Doritos into the bottom of the prepared baking dish.
  7. Pour the meat and sauce mixture evenly over the chip layer.
  8. Sprinkle the remaining 0.5 cup of cheddar cheese and the Monterey Jack cheese over the top of the filling.
  9. Top the casserole evenly with the remaining crushed Doritos.
  10. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown. Let it rest for 5 minutes before serving.

Notes

  • For a Cool Ranch flavor variation, substitute Nacho Cheese Doritos with Cool Ranch Doritos.
  • If you want to keep the topping crunchier, mix only half of the crushed chips into the filling and reserve the other half to sprinkle on top for the last 10 minutes of baking.
  • You can prepare this entire dish ahead of time, cover it, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if baking straight from the refrigerator.
