1 tablespoon milk or water
1/4 cup cherry tomatoes, halved
2 tablespoons fresh mozzarella cheese, diced
1 teaspoon fresh basil, chopped
Pinch of salt
Pinch of black pepper
Instructions
Lightly grease two standard microwave-safe ramekins or large mugs.
In a small bowl, whisk the eggs with milk or water, salt, and pepper until combined.
Divide the halved cherry tomatoes and diced mozzarella evenly between the two prepared ramekins.
Pour the egg mixture over the tomatoes and cheese in each ramekin, distributing equally.
Sprinkle the chopped fresh basil over the top of the egg mixture in both cups.
Microwave on high for 60 to 90 seconds. Check for doneness; the eggs should be set but not rubbery. If needed, microwave in 15-second intervals until cooked through.
Carefully remove the cups from the microwave and let them cool for one minute before serving directly from the ramekin or gently inverting onto a plate.
Notes
For a lower-carb option, omit the milk.
If you do not have fresh basil, use 1/2 teaspoon of dried basil, added with the salt and pepper.
If you want to make these ahead, you can prepare the ingredients (chop tomatoes and cheese) and store them in the refrigerator for up to one day before cooking.
