Make this classic Italian comfort food at home with crispy breaded chicken cutlets, rich marinara, and melted cheese. This quick chicken parmesan recipe is perfect for a weeknight dinner or impressing guests.

  • 4 boneless, skinless chicken breasts, halved horizontally to make 8 thin cutlets
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup olive oil, for frying
  • 2 cups quality marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced or shredded
  • Fresh basil, chopped, for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk the eggs in the second dish. In the third dish, combine the panko breadcrumbs, 1/2 cup grated Parmesan, oregano, and garlic powder. Season the breadcrumbs lightly with salt and pepper.
  3. Take one chicken cutlet and dredge it thoroughly in the flour, shaking off any excess. Dip it into the egg mixture, allowing excess to drip off. Finally, press the cutlet firmly into the panko mixture until it is completely coated. Repeat this process for all cutlets.
  4. Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, carefully place the breaded cutlets into the skillet, working in batches to avoid overcrowding. Cook for 3 to 4 minutes per side until golden brown and crispy. You are just browning the chicken; it does not need to be cooked through.
  5. Arrange the browned chicken cutlets in a single layer in the prepared baking dish.
  6. Spoon about 1/4 cup of marinara sauce over the top of each cutlet.
  7. Place a slice or a generous portion of mozzarella cheese on top of the sauce on each cutlet. Sprinkle a little extra grated Parmesan over the cheese.
  8. Bake for 12 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the cheese is melted and bubbly.
  9. Remove from the oven. Garnish with fresh chopped basil before serving. Serve immediately over your favorite pasta for a family friendly pasta night.

Notes

  • For extra crispy chicken, you can bake the chicken instead of frying. Spray both sides of the breaded cutlets lightly with cooking spray and bake at 400 degrees Fahrenheit for 15 minutes, flipping halfway, before adding sauce and cheese.
  • Use a good quality jarred marinara sauce to save time, or use your favorite homemade recipe.
  • If you are short on time, you can skip the breading and use thin, pre-cooked chicken tenders, though the texture will change.
