Prepare simple, flavorful chicken skewers quickly for a light summer dinner using a basic lemon herb marinade and grilling.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into 1/2-inch thick rounds
  • 1 red onion, cut into 1-inch wedges
  • 8 wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the marinade.
  3. Add the cubed chicken to the marinade, toss to coat completely, and let it marinate for 20 minutes at room temperature. Do not marinate for longer than 30 minutes.
  4. Preheat your grill to medium-high heat (about 400 degrees F). Lightly oil the grates.
  5. Thread the marinated chicken pieces onto the skewers, alternating with pieces of red bell pepper, zucchini, and red onion.
  6. Place the skewers on the preheated grill.
  7. Grill for 10 to 12 minutes total, turning every 3 to 4 minutes, until the chicken is cooked through and has internal temperature of 165 degrees F.
  8. Remove from the grill and serve immediately.

Notes

  • You can substitute the vegetables with cherry tomatoes or mushrooms if you prefer.
  • For easy cleanup, line a baking sheet with foil before placing the marinated chicken pieces on it.
