2 tablespoons olive oil
1 large yellow onion, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional)
2 (15-ounce) cans black beans, rinsed and drained
4 cups vegetable broth
1/2 cup full-fat coconut milk (or heavy cream for non-vegan)
1 tablespoon lime juice
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper. Cook until softened, about 5 to 7 minutes.
Add the minced garlic, cumin, oregano, and cayenne pepper. Cook for 1 minute until fragrant.
Add the rinsed black beans and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
Remove the pot from the heat. Use an immersion blender to blend the soup until it reaches your desired creaminess. Alternatively, carefully transfer about two-thirds of the soup to a standard blender, blend until smooth, and return it to the pot.
Stir in the coconut milk and lime juice. Heat gently for 2 minutes, but do not boil.
Season with salt and pepper to taste. Serve hot with your favorite toppings.
Notes
For extra flavor, sauté 1/2 cup of chopped celery or carrots with the onion and pepper.
If you prefer a spicier soup, add a chopped jalapeño with the onions.
Toppings suggestions include fresh cilantro, diced avocado, a dollop of plain Greek yogurt, or crumbled cotija cheese.
