8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
1/2 cup mayonnaise
1/2 cup grated Parmesan cheese
1 (4 ounce) can diced green chiles, drained
1 cup pickled or fresh chopped jalapeño peppers (adjust to your spice preference)
4 slices cooked, crumbled bacon (optional)
2 green onions, sliced (for garnish)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a small oven-safe skillet.
In a large bowl, combine the softened cream cheese, sour cream, Monterey Jack cheese, cheddar cheese, mayonnaise, and Parmesan cheese. Mix until smooth.
Stir in the drained green chiles and the chopped jalapeño peppers. If you are using bacon, fold in the crumbled bacon now.
Spread the mixture evenly into your prepared baking dish.
Bake for 20 to 25 minutes, or until the dip is hot throughout and the top is lightly golden brown.
Remove from the oven and let it cool for 5 minutes before serving. Garnish with sliced green onions.
Serve warm with tortilla chips, crackers, or vegetable sticks.
Notes
For a slow cooker version, combine all ingredients, place in a small slow cooker, and cook on low for 2 hours or on high for 1 hour, stirring halfway through.
If you prefer a milder dip, remove the seeds and membranes from the fresh jalapeños before chopping.
You can prepare the dip mixture up to 24 hours ahead of time and store it covered in the refrigerator. Add 5-10 minutes to the baking time if baking cold.
