Make a quick, creamy, and lighter Caesar dressing using Greek yogurt instead of mayonnaise.

Ingredients

  • 1 cup plain Greek yogurt (2% or full fat)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 2 anchovy fillets, mashed into a paste (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons water (or more, for thinning)
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions

  1. Combine the Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, anchovy paste (if using), Parmesan cheese, pepper, and salt in a medium bowl.
  2. Whisk all ingredients together until completely smooth and well combined.
  3. Add water one tablespoon at a time, mixing until you reach your desired dressing consistency.
  4. Taste the dressing and adjust seasonings, adding more lemon juice or salt if needed.
  5. Cover the bowl and chill the dressing for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • For a vegan version, substitute the Greek yogurt with plain, unsweetened soy or almond yogurt and omit the anchovies and Parmesan cheese, adding extra nutritional yeast for a cheesy flavor.
  • If you prefer a stronger anchovy flavor, add one more fillet.
  • This dressing thickens as it chills; add more water when serving if necessary.
