4 cups cold water
1 large cucumber, peeled and roughly chopped
1/2 cup fresh lime juice (about 4-5 limes)
1/4 cup granulated sugar (adjust to taste)
1/4 cup fresh mint leaves (optional)
Ice cubes for serving
Instructions
Place the chopped cucumber, lime juice, sugar, and mint leaves (if using) into a blender.
Add 1 cup of the cold water to the blender. Blend on high until the mixture is completely smooth.
Pour the blended mixture through a fine-mesh sieve into a large pitcher, pressing down on the solids to extract all the liquid. Discard the pulp.
Stir in the remaining 3 cups of cold water into the pitcher. Taste and add more sugar or lime juice if needed.
Chill the agua fresca in the refrigerator for at least 30 minutes before serving for best flavor.
Serve over plenty of ice.
Notes
You can substitute sparkling water for some or all of the still water for a fizzy drink.
For a make-ahead option, prepare the base mixture (steps 1-4 without the final water addition) and store it covered in the refrigerator for up to 2 days. Add the remaining water just before serving.
If you prefer a less sweet drink, start with 2 tablespoons of sugar and increase slowly.
