4 (6 oz) cod fillets
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, drained and chopped
2 cups fresh spinach
1 teaspoon dried Italian seasoning
Instructions
Pat the cod fillets dry and season both sides with salt and pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the cod for 2 minutes per side until lightly golden. Remove the fish from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
Stir in the heavy cream, sun-dried tomatoes, and Italian seasoning. Bring the sauce to a gentle simmer.
Stir in the Parmesan cheese until the sauce thickens slightly. Add the spinach and cook until wilted, about 2 minutes.
Return the cod fillets to the skillet, nestling them into the sauce.
Cover the skillet and cook on low heat for 5 to 7 minutes, or until the fish flakes easily with a fork.
Serve immediately directly from the pan.
Notes
You can substitute cod with haddock or tilapia if desired.
For extra flavor, add a squeeze of fresh lemon juice to the sauce before serving.
If your skillet is not oven-safe, transfer the fish and sauce to a baking dish after simmering on the stovetop and bake at 375°F for 8 minutes.
