Make flavorful, creamy salsa verde chicken using just one pot for simple cleanup. This recipe is perfect for a quick weeknight dinner.

  • 1.5 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (16 ounce) jar salsa verde
  • 4 ounces cream cheese, cubed
  • 1/2 cup chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional: Fresh cilantro for garnish

Instructions

  1. Season the chicken breasts lightly with salt and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, cumin, and chili powder, and cook for 1 minute until fragrant.
  4. Pour in the salsa verde and chicken broth. Stir to combine, scraping up any browned bits from the bottom of the pot.
  5. Return the browned chicken to the skillet. Bring the mixture to a simmer.
  6. Reduce the heat to low, cover the pot, and cook for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
  7. Remove the lid. Add the cubed cream cheese to the sauce. Stir gently until the cream cheese melts and the sauce becomes creamy.
  8. Shred the chicken directly in the pot using two forks, or slice it before returning it to the sauce. Stir to coat the chicken evenly.
  9. Serve hot, garnished with fresh cilantro if desired.

Notes

  • Serve this creamy chicken over rice, with tortillas, or alongside steamed vegetables.
  • If you prefer a thinner sauce, add a splash more chicken broth while melting the cream cheese.
  • For extra flavor, you can sear the chicken in a little extra seasoning before removing it.
