  • 6 cups chopped ripe peaches (about 2.5 pounds)
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 1/4 cup pectin

Instructions

  1. Prepare your peaches: Wash, peel, pit, and chop your ripe peaches.
  2. Combine ingredients: In a large bowl, mix the chopped peaches, granulated sugar, and lemon juice. Let it sit for about 10 minutes to allow the sugar to start dissolving.
  3. Add pectin: Stir in the pectin until it’s fully combined with the peach mixture.
  4. Cook the jam: Pour the mixture into a saucepan and bring it to a rolling boil over medium-high heat, stirring constantly.
  5. Boil for 1 minute: Continue to boil, stirring, for exactly 1 minute.
  6. Remove from heat: Take the saucepan off the heat.
  7. Skim foam: If any foam forms on top, gently skim it off with a spoon.
  8. Fill containers: Ladle the hot jam into freezer-safe containers, leaving about 1/2 inch of headspace.
  9. Cool and freeze: Let the jam cool at room temperature for about an hour, then seal the containers and transfer them to the freezer.

Notes

  • For best results, use ripe but firm peaches.
  • Adjust sugar to your sweetness preference, but be aware that reducing sugar may affect the set of the jam.
  • This jam will last in the freezer for up to a year.
