  2. In a medium bowl, mix the peanut butter, sugar, egg, vanilla extract, and baking soda until just combined. Do not overmix.
  3. Scoop the dough into rounded tablespoons and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.
  4. Use a fork to press down on each dough ball, creating a crisscross pattern. This helps the cookies bake evenly.
