Ingredients
Scale
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup finely chopped pepperoni
1/2 cup pizza sauce
1/2 cup milk
1/4 cup vegetable oil
1 large egg
Instructions
Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, baking powder, salt, and pepper. Stir in the Parmesan cheese, mozzarella cheese, and chopped pepperoni until they are evenly distributed.
In a separate medium bowl, whisk together the pizza sauce, milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula just until the batter comes together. Do not overmix; a few lumps are fine.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
These mini pizza muffins freeze well. Cool them completely, place them in a freezer-safe bag, and freeze for up to three months. Reheat in the microwave or toaster oven.
If you are making these for a party, you can top each muffin with a small dot of extra pizza sauce and a tiny piece of mozzarella before baking for a classic look.
Feel free to swap the pepperoni for cooked sausage, diced ham, or chopped vegetables like bell peppers for different lunchbox pizza bites.
