2 lbs large shrimp, peeled and deveined
1 lb smoked sausage (like Andouille or Kielbasa), sliced into 1-inch pieces
1.5 lbs small red potatoes, halved or quartered
4 ears of corn, cut into 2-inch pieces
1 medium onion, quartered
4 cloves garlic, minced
1/2 cup unsalted butter, melted
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional)
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
In a large bowl, combine the potatoes and sausage. Drizzle with 1 tablespoon of the melted butter and toss with half of the Cajun seasoning. Spread this mixture in a single layer on the prepared baking sheet.
Roast the potatoes and sausage for 15 minutes.
While the potatoes roast, prepare the sauce. In a small saucepan over low heat, melt the remaining butter. Stir in the minced garlic, remaining Cajun seasoning, smoked paprika, and cayenne pepper, if using. Cook for 1 minute until fragrant. Remove from heat.
Remove the sheet pan from the oven. Add the corn pieces and onion quarters to the pan, tossing them gently with the existing ingredients.
Add the shrimp to the pan, distributing them evenly. Pour the prepared garlic butter sauce over the entire contents of the sheet pan, tossing gently to coat everything.
Return the sheet pan to the oven and bake for another 10 to 12 minutes, or until the shrimp are pink and cooked through and the potatoes are tender.
Remove from the oven. Squeeze fresh lemon juice over the boil and sprinkle with fresh parsley before serving directly from the pan.
Notes
For a spicier boil, increase the amount of cayenne pepper or add a dash of hot sauce to the butter mixture.
If you prefer a Low Country style, substitute the Cajun seasoning with Old Bay seasoning.
You can add other vegetables like peeled and quartered carrots or small broccoli florets along with the potatoes.
