Make this simple, fresh salad featuring strawberries and avocado with a bright citrus vinaigrette dressing.

Ingredients

  • 4 cups mixed greens
  • 1 pint fresh strawberries, hulled and sliced
  • 2 ripe avocados, diced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup slivered almonds, toasted
  • For the Vinaigrette: 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon Dijon mustard
  • 1/2 cup olive oil
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the orange juice, lime juice, and Dijon mustard.
  2. Slowly whisk in the olive oil until the dressing emulsifies. Stir in the honey, salt, and pepper. Set aside.
  3. In a large bowl, combine the mixed greens, sliced strawberries, and diced avocado.
  4. If using, sprinkle the feta cheese and toasted almonds over the salad.
  5. Just before serving, drizzle the citrus vinaigrette over the salad. Gently toss to coat all ingredients.
  6. Serve immediately.

Notes

  • Toast the slivered almonds in a dry skillet over medium heat for 3-5 minutes, stirring often, until fragrant.
  • If you do not have fresh orange juice, substitute with an equal amount of white wine vinegar.
  • For a protein boost, add grilled chicken or shrimp to this salad.
