- 4 cups mixed greens
- 1 pint fresh strawberries, hulled and sliced
- 2 ripe avocados, diced
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup slivered almonds, toasted
- For the Vinaigrette: 1/4 cup fresh orange juice
- 2 tablespoons fresh lime juice
- 1 tablespoon Dijon mustard
- 1/2 cup olive oil
- 1 teaspoon honey or maple syrup
- Salt and black pepper to taste
- Prepare the vinaigrette: In a small bowl, whisk together the orange juice, lime juice, and Dijon mustard.
- Slowly whisk in the olive oil until the dressing emulsifies. Stir in the honey, salt, and pepper. Set aside.
- In a large bowl, combine the mixed greens, sliced strawberries, and diced avocado.
- If using, sprinkle the feta cheese and toasted almonds over the salad.
- Just before serving, drizzle the citrus vinaigrette over the salad. Gently toss to coat all ingredients.
- Serve immediately.
Notes
- Toast the slivered almonds in a dry skillet over medium heat for 3-5 minutes, stirring often, until fragrant.
- If you do not have fresh orange juice, substitute with an equal amount of white wine vinegar.
- For a protein boost, add grilled chicken or shrimp to this salad.
