1 pound ground beef
1 packet taco seasoning mix
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup salsa (optional, for mixing)
8 large flour tortillas
Instructions
Cook the ground beef in a skillet over medium heat until fully browned. Drain off any excess grease.
Stir the taco seasoning mix into the cooked beef according to package directions, usually adding a small amount of water. Set aside to cool slightly.
In a bowl, mix the softened cream cheese and shredded cheddar cheese until combined. If using, mix in the salsa.
Spread an even layer of the cream cheese mixture over one side of each flour tortilla, leaving a small border.
Spoon a thin layer of the seasoned ground beef mixture over the cream cheese layer on each tortilla.
Roll each tortilla up tightly from one edge to the other.
Wrap the rolled tortillas tightly in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up. This step helps them slice cleanly.
Remove the plastic wrap and slice each roll into 1-inch thick pinwheels.
Notes
For make-ahead preparation, complete steps 1 through 4, then assemble and chill the rolls for up to 24 hours before slicing and serving.
Serve these pinwheels with extra salsa, sour cream, or guacamole for dipping.
If you prefer chicken, substitute cooked, shredded chicken for the ground beef.
