2 cups frozen or fresh corn kernels
8 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded Monterey Jack cheese
1/2 cup crumbled Cotija cheese (or feta as a substitute)
1/2 cup finely chopped fresh cilantro
1/4 cup finely chopped red onion
1-2 jalapeños, seeded and minced (adjust to your spice preference)
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Juice of 1 lime
For topping: extra Cotija cheese, chili powder, lime wedges
Instructions
If using frozen corn, thaw it first. If you prefer a smoky flavor, you can lightly char the corn kernels in a dry skillet over medium-high heat until slightly browned, then set aside.
In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
Stir in the shredded Monterey Jack cheese, Cotija cheese, cilantro, red onion, minced jalapeños, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly distributed.
Fold in the corn kernels and the lime juice until just combined.
**For Baked Dip:** Transfer the mixture to a small oven-safe dish. Top with a little extra Monterey Jack and Cotija cheese. Bake at 375°F (190°C) for 15 to 20 minutes, or until hot and bubbly.
**For Cold/Room Temperature Dip:** Place the mixture in a serving bowl. Cover and chill for at least 1 hour to allow flavors to meld.
Before serving, sprinkle the top with extra Cotija cheese and a light dusting of chili powder. Serve with tortilla chips, sturdy crackers, or vegetable sticks.
Notes
For a spicier dip, leave some seeds in the jalapeños or add a dash of cayenne pepper.
If you cannot find Cotija cheese, use feta cheese for a similar salty, crumbly texture.
To make this a layered dip, spread a layer of refried beans on the bottom before adding the corn mixture.
