A warm, creamy, and flavorful dip inspired by Mexican street corn, perfect for parties and gatherings.

Ingredients

  • 3 cups corn kernels (fresh or frozen)
  • 1 tablespoon olive oil
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup grated cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1-2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional toppings: extra cotija cheese, chopped cilantro, chili powder

Instructions

  1. If using fresh corn, cut kernels off the cobs. If using frozen corn, thaw it.
  2. Heat olive oil in a skillet over medium-high heat. Add corn kernels and cook until slightly charred, about 5-7 minutes.
  3. In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth.
  4. Stir in the charred corn, cotija cheese, chopped cilantro, minced garlic, chili powder, and smoked paprika.
  5. Add the lime juice and stir everything together until well combined.
  6. Season with salt and pepper to taste.
  7. Transfer the dip to a serving dish.
  8. Garnish with additional cotija cheese, cilantro, and chili powder if desired.
  9. Serve warm.

Notes

  • For a spicier dip, add a pinch of cayenne pepper.
  • You can char the corn under a broiler if you don’t have a skillet.
  • This dip can be made ahead of time and reheated before serving.
