2 ripe mangoes, diced
1/2 red onion, finely chopped
1/2 red bell pepper, finely chopped
1 jalapeño, seeded and minced (optional)
1/4 cup chopped fresh cilantro
Juice of 1 lime
Salt to taste
Instructions
Prepare the mangoes by peeling, pitting, and dicing them into small cubes.
In a medium bowl, combine the diced mangoes, chopped red onion, chopped red bell pepper, and minced jalapeño (if using).
Add the chopped fresh cilantro to the bowl.
Squeeze the juice of one lime over the mixture.
Gently toss all the ingredients together until well combined.
Season with salt to your preference.
Let the salsa sit for about 10-15 minutes to allow the flavors to meld before serving.
Notes
For extra heat, leave some seeds in the jalapeño.
If mangoes are not readily available, other fruits like pineapple or peaches can be substituted.
