1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons olive oil
6 tablespoons unsalted butter
5 cloves garlic, minced
1/2 cup chicken broth
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Season the chicken pieces with salt, pepper, and paprika.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken to the hot skillet in a single layer. Cook for 5-7 minutes, turning occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Let it melt.
Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic burn.
Pour in the chicken broth and lemon juice. Scrape up any browned bits from the bottom of the pan. Let the sauce simmer for 2 minutes until it thickens slightly.
Return the cooked chicken bites to the skillet. Toss to coat completely in the garlic butter sauce.
Stir in the fresh parsley. Serve immediately.
Notes
You can substitute dried parsley if fresh is not available, using 1 teaspoon.
For extra richness, add 1/4 cup of grated Parmesan cheese to the sauce at the end, just before adding the chicken back in.
If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir this slurry into the simmering sauce before adding the chicken.
