Garlic Butter Quinoa with Green Peas

A simple, flavorful stovetop recipe combining fluffy quinoa, sweet green peas, and a rich garlic butter sauce. This makes an excellent quick side dish.

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup frozen green peas
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Combine the rinsed quinoa and vegetable broth (or water) in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed.
  2. Remove the quinoa from the heat and let it stand, covered, for 5 minutes. Fluff with a fork.
  3. While the quinoa rests, melt the butter in a separate skillet over medium heat.
  4. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic brown.
  5. Add the frozen green peas to the skillet. Sauté for 3 to 4 minutes until the peas are heated through and tender-crisp.
  6. Add the cooked, fluffed quinoa to the skillet with the garlic and peas. Stir gently to combine everything thoroughly.
  7. Stir in the fresh parsley. Season with salt and pepper to your preference.
  8. Serve immediately as a side dish or light meal.

Notes

  • For a vegan version, substitute the butter with 2 tablespoons of olive oil or vegan butter.
  • You can add a squeeze of fresh lemon juice at the end for brightness.
  • Cook extra quinoa ahead of time for faster weeknight preparation.
