A simple recipe for roasting asparagus and mushrooms coated in a rich garlic butter mixture until tender-crisp.

  • 1 pound fresh asparagus, trimmed
  • 8 ounces cremini mushrooms, cleaned and halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, combine the melted butter and minced garlic. Mix well.
  3. Place the trimmed asparagus and prepared mushrooms on the baking sheet.
  4. Pour the garlic butter mixture evenly over the vegetables. Toss gently with your hands or tongs until everything is coated.
  5. Spread the vegetables into a single layer on the baking sheet. Do not overcrowd the pan; use two sheets if necessary for proper roasting.
  6. Sprinkle the salt and pepper over the vegetables.
  7. Roast for 12 to 15 minutes. The asparagus should be bright green and tender-crisp, and the mushrooms should be lightly browned.
  8. Remove from the oven. If using, drizzle with fresh lemon juice before serving.

Notes

  • For the best results, ensure the vegetables are in a single layer so they roast instead of steam.
  • You can add a pinch of red pepper flakes to the butter mixture for a little heat.
  • If your asparagus spears are very thin, reduce the roasting time by 2-3 minutes.
