1.5 pounds sirloin steak, cut into 1-inch cubes
1.5 pounds baby potatoes, halved or quartered if large
4 tablespoons olive oil, divided
5 cloves garlic, minced
1/2 cup unsalted butter
1/4 cup fresh parsley, chopped
1 tablespoon lemon juice
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
Roast the potatoes for 20-25 minutes, or until tender and golden brown, flipping halfway through.
While the potatoes are roasting, pat the steak cubes dry and season generously with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Sear the steak cubes in batches, about 1-2 minutes per side, until browned. Do not overcrowd the pan. Remove steak from skillet and set aside.
Add the remaining 1 tablespoon of olive oil and the butter to the skillet over medium heat.
Once the butter is melted, add the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn the garlic.
Return the seared steak to the skillet. Add the roasted potatoes, lemon juice, and chopped parsley.
Toss everything together to coat the steak and potatoes in the garlic butter sauce. Cook for another 1-2 minutes until heated through.
Serve immediately.
Notes
For crispier potatoes, roast them on a separate baking sheet.
Adjust garlic to your preference – we love lots of garlic!
Feel free to add other herbs like rosemary or thyme.
