You need a vegetable side dish that is flavorful and quick. This recipe for roasted green beans uses garlic and Parmesan cheese to create a crispy, addictive side perfect for weeknight dinners or Thanksgiving.

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. Place the trimmed green beans in a large bowl. Drizzle with olive oil and toss to coat them evenly.
  3. Add the minced garlic, salt, and pepper to the bowl. Toss everything together until the beans are well seasoned.
  4. Spread the green beans in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for crispier results.
  5. Roast for 12 minutes.
  6. Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the hot green beans.
  7. Return the beans to the oven and roast for another 3 to 5 minutes, or until the cheese is melted and the beans are tender-crisp.
  8. Serve immediately as a flavorful vegetable side dish.

Notes

  • For extra flavor, add 2 slices of crumbled cooked bacon when tossing with the Parmesan cheese.
  • If you like your beans very tender, roast them for an extra 5 minutes before adding the cheese.
