A reliable recipe for making light and tender pancakes using a gluten-free flour blend, mimicking the classic buttermilk texture.

  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1 tablespoon white vinegar or lemon juice
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Make the buttermilk substitute: Pour the vinegar or lemon juice into the milk. Stir gently and let it sit for 5 minutes until it slightly curdles.
  2. In a large bowl, whisk together the gluten-free flour blend, sugar, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk the eggs, then whisk in the prepared buttermilk mixture and the melted butter.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a whisk or spatula until just combined. Do not overmix; a few lumps are fine. Overmixing can make gluten-free pancakes dense.
  5. Heat a lightly oiled griddle or large non-stick skillet over medium heat. The griddle is ready when a drop of water sizzles immediately.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes per side. You know the first side is ready to flip when bubbles appear on the surface and the edges look set.
  8. Flip and cook the second side until golden brown, about 1 to 2 minutes more.
  9. Serve immediately with your preferred toppings.

Notes

  • Use a 1:1 gluten-free flour blend that already contains xanthan gum for the best results.
  • For extra fluffy pancakes, let the batter rest for 5 minutes before cooking.
  • If your GF blend does not contain xanthan gum, add 1 teaspoon to the dry ingredients.
  • Keep cooked pancakes warm in a single layer on a baking sheet in a 200°F oven while you finish the batch.
