A simple recipe for baked oatmeal flavored like carrot cake, using gluten-free oats and spices. This makes a great make-ahead breakfast.

  • 1 1/2 cups certified gluten-free rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/4 cup chopped walnuts (optional)
  • For Topping: 1/2 cup plain Greek yogurt, 1 tablespoon maple syrup, 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish or use a round 9-inch pie dish.
  2. In a large bowl, whisk together the dry ingredients: oats, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. In a separate bowl, mix the wet ingredients: applesauce, milk, egg, maple syrup, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just mixed. Do not overmix.
  5. Fold in the grated carrots and chopped walnuts, if using.
  6. Pour the oat mixture into the prepared baking dish and spread evenly.
  7. Bake for 30 to 35 minutes, or until the top is set and lightly golden brown.
  8. While the oats bake, prepare the topping: Mix the Greek yogurt, maple syrup, and vanilla extract in a small bowl.
  9. Let the baked oats cool for 5 minutes after removing them from the oven.
  10. Serve warm or cold, topped with the yogurt mixture.

Notes

  • Use certified gluten-free oats to maintain the gluten-free requirement.
  • You can prepare this recipe ahead of time and store it covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave.
  • For a richer flavor, substitute half of the milk with canned coconut milk.
