- 1 1/2 cups certified gluten-free rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup milk (dairy or non-dairy)
- 1 large egg
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/4 cup chopped walnuts (optional)
- For Topping: 1/2 cup plain Greek yogurt, 1 tablespoon maple syrup, 1/4 teaspoon vanilla extract
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish or use a round 9-inch pie dish.
- In a large bowl, whisk together the dry ingredients: oats, baking powder, cinnamon, ginger, nutmeg, and salt.
- In a separate bowl, mix the wet ingredients: applesauce, milk, egg, maple syrup, and vanilla extract until combined.
- Pour the wet mixture into the dry ingredients and stir until just mixed. Do not overmix.
- Fold in the grated carrots and chopped walnuts, if using.
- Pour the oat mixture into the prepared baking dish and spread evenly.
- Bake for 30 to 35 minutes, or until the top is set and lightly golden brown.
- While the oats bake, prepare the topping: Mix the Greek yogurt, maple syrup, and vanilla extract in a small bowl.
- Let the baked oats cool for 5 minutes after removing them from the oven.
- Serve warm or cold, topped with the yogurt mixture.

- Use certified gluten-free oats to maintain the gluten-free requirement.
- You can prepare this recipe ahead of time and store it covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave.
- For a richer flavor, substitute half of the milk with canned coconut milk.
