1 cup gluten-free all-purpose flour blend (with xanthan gum)
1 cup yellow cornmeal
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup shredded sharp cheddar cheese
1/2 cup chopped fresh or pickled jalapeños (remove seeds for less heat)
1 cup milk (dairy or non-dairy)
1/2 cup vegetable oil or melted butter
2 large eggs
Instructions
Preheat your oven to 400°F (200°C). Grease and lightly flour (using GF flour) an 8×8 inch baking pan or a 9-inch round cast-iron skillet.
In a large bowl, whisk together the gluten-free flour blend, cornmeal, sugar, baking powder, and salt.
Stir in the shredded cheddar cheese and chopped jalapeños until they are evenly distributed throughout the dry mix.
In a separate medium bowl, whisk together the milk, oil (or melted butter), and eggs until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are acceptable for moist cornbread.
Pour the batter into the prepared pan or skillet. Spread the batter evenly.
Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
Let the cornbread cool in the pan for 10 minutes before slicing and serving warm.
Notes
For a richer flavor, use buttermilk instead of regular milk. If you do, reduce the baking powder to 2 teaspoons.
If your GF flour blend does not contain xanthan gum, add 1/2 teaspoon to the dry ingredients to help with structure.
If you prefer a Southern-style texture, use fine-ground cornmeal and slightly increase the cornmeal to 1 1/4 cups, reducing the GF flour to 3/4 cup.
