Gluten-Free Chocolate Chip Biscotti

A recipe for classic, crunchy, twice-baked chocolate chip biscotti made with gluten-free flour.

  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the gluten-free flour blend, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Turn the dough out onto the prepared baking sheet. Shape the dough into a log about 10 inches long and 3 inches wide, about 1 inch high.
  8. Bake for 25 to 30 minutes, or until the log is firm and lightly golden brown.
  9. Remove the log from the oven and let it cool on the baking sheet for 10 minutes.
  10. Reduce the oven temperature to 300°F (150°C).
  11. Carefully transfer the warm log to a cutting board. Using a sharp, serrated knife, slice the log diagonally into 1/2-inch thick slices.
  12. Lay the slices cut-side down on the baking sheet.
  13. Bake for another 10 to 15 minutes.
  14. Flip the biscotti over and bake for an additional 10 to 15 minutes until they are dry and crisp.
  15. Cool completely on a wire rack before serving or storing.

Notes

  • Use a gluten-free flour blend that already contains xanthan gum for the best texture.
  • For extra crispness, bake the second time for a few extra minutes until they reach your desired crunch level.
  • You can substitute the chocolate chips with 1/2 cup of chopped nuts like almonds or pecans.
  • These cookies are perfect for dipping in coffee or sweet dessert wine.
