- 1/2 cup tapioca starch
- 1/4 cup coconut sugar
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup unsalted butter, melted
- 1/4 cup maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the almond flour, tapioca starch, coconut sugar, baking soda, and sea salt.
- In a separate bowl, whisk together the melted butter, maple syrup, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
