A straightforward recipe for making savory fried rice that is completely gluten-free and seasoned with a bright lemon pepper flavor.

  • 3 cups cooked, cold day-old rice (Jasmine or medium grain recommended)
  • 2 tablespoons avocado oil or other high-heat oil
  • 1 cup mixed vegetables (peas, carrots, diced)
  • 2 cloves garlic, minced
  • 1/2 cup cooked protein, diced (optional, e.g., chicken or tofu)
  • 2 large eggs, lightly beaten
  • 3 tablespoons gluten-free tamari or coconut aminos
  • 1 tablespoon fresh lemon zest
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon lemon pepper seasoning blend (ensure GF)
  • 1/4 teaspoon salt, or to taste
  • 1 green onion, sliced, for garnish

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beaten eggs and quickly scramble until just set. Remove the eggs from the skillet and set aside.
  2. Add the remaining 1 tablespoon of oil to the skillet. Add the mixed vegetables and cook for 3 to 4 minutes until slightly tender.
  3. Add the minced garlic and cook for 30 seconds until fragrant. If using, add the cooked protein and cook for 1 minute.
  4. Add the cold, day-old rice to the skillet. Break up any clumps with your spatula. Stir-fry for 3 to 5 minutes until the rice is heated through and slightly toasted.
  5. Push the rice to one side of the skillet. Pour the tamari (or coconut aminos) into the empty space and let it bubble for a few seconds before mixing it into the rice.
  6. Stir in the lemon zest, cracked black pepper, and lemon pepper seasoning blend. Mix well to coat all the rice evenly.
  7. Return the scrambled eggs to the skillet. Toss everything together gently. Taste and add salt if needed.
  8. Serve immediately, garnished with sliced green onions.

Notes

  • Using cold, day-old rice is key for achieving the best texture in fried rice; fresh rice will become mushy.
  • If you do not have a gluten-free lemon pepper seasoning blend, combine 1 teaspoon fresh lemon zest, 1 teaspoon cracked black pepper, and 1/4 teaspoon salt to create your own flavor base.
  • For a dairy-free dish, confirm your oil choice is dairy-free; this recipe is naturally dairy-free.
