A simple recipe for cooking mushrooms with a savory, spicy, and slightly sweet gochujang glaze.

  • 1 lb mixed mushrooms (cremini, shiitake), cleaned and halved or quartered
  • 2 tablespoons neutral oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or maple syrup
  • 1 teaspoon sesame oil
  • 1/4 cup water or vegetable broth
  • 1 green onion, sliced (for garnish)
  • 1 teaspoon toasted sesame seeds (for garnish)

Instructions

  1. Heat the neutral oil in a large skillet over medium-high heat.
  2. Add the mushrooms to the skillet and cook without stirring for 3-4 minutes until they begin to brown. Stir and continue cooking until they release their moisture and brown further, about 5 more minutes.
  3. Reduce the heat to medium. Push the mushrooms to one side of the pan. Add the minced garlic and grated ginger to the empty space and cook for 30 seconds until fragrant.
  4. In a small bowl, whisk together the gochujang, soy sauce, rice vinegar, brown sugar, sesame oil, and water or broth to create the glaze.
  5. Pour the glaze mixture over the mushrooms and stir well to coat everything evenly.
  6. Let the mixture simmer for 2-3 minutes, stirring occasionally, until the sauce thickens and coats the mushrooms well.
  7. Remove from heat. Garnish with sliced green onion and toasted sesame seeds before serving.

Notes

  • Use a mix of mushrooms for varied texture and flavor.
  • For a deeper flavor, roast the mushrooms at 400°F (200°C) for 15 minutes before tossing them in the glaze on the stovetop.
  • Adjust the amount of gochujang if you prefer less heat.
