Make this easy, creamy Grasshopper Pie featuring a chocolate cookie crust and a refreshing mint filling. This dessert requires no baking and sets up well in the refrigerator.

  • 1 1/2 cups chocolate cookie crumbs (about 30 cookies)
  • 6 tablespoons unsalted butter, melted
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream, cold
  • 1/2 cup mint chocolate chip ice cream, softened slightly
  • 1/4 cup crème de menthe liqueur (optional)
  • Green food coloring (optional, a few drops)
  • 1 cup frozen whipped topping (like Cool Whip), thawed
  • Chocolate shavings, for garnish

Instructions

  1. Prepare the crust: Combine the chocolate cookie crumbs and melted butter in a bowl. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Chill the crust for at least 15 minutes while you prepare the filling.
  2. Make the cream cheese base: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar and vanilla extract until fully combined.
  3. Add liquid ingredients: Beat in the cold heavy cream and the softened mint chocolate chip ice cream until the mixture is smooth. If using, mix in the crème de menthe liqueur and a few drops of green food coloring until you reach your desired color.
  4. Fold in whipped topping: Gently fold the thawed whipped topping into the cream cheese mixture until no white streaks remain. Do not overmix.
  5. Assemble the pie: Pour the mint filling into the chilled chocolate cookie crust and spread it evenly.
  6. Chill the pie: Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  7. Serve: Before serving, garnish the top with chocolate shavings. Slice and serve cold.

Notes

  • For a firmer, frozen pie, you can freeze this recipe for 4 hours instead of refrigerating.
  • If you omit the crème de menthe, add 1/2 teaspoon of peppermint extract for mint flavor.
  • You can substitute graham crackers or wafer cookies for the chocolate cookies if you prefer a different crust flavor.
