1 pound boneless, skinless chicken breasts
2 tablespoons olive oil, divided
1 lemon, juiced
1 teaspoon dried oregano
Salt and black pepper to taste
8 ounces orzo pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/4 cup fresh parsley, chopped
Feta cheese, crumbled (optional)
Instructions
Preheat grill or grill pan to medium-high heat.
In a bowl, toss chicken breasts with 1 tablespoon olive oil, lemon juice, oregano, salt, and pepper.
Grill chicken for 6-8 minutes per side, or until cooked through. Let rest, then dice.
Meanwhile, cook orzo pasta according to package directions. Drain and rinse with cold water.
In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, and chopped parsley.
Add diced grilled chicken to the salad.
In a small bowl, whisk together the remaining 1 tablespoon olive oil, lemon juice, oregano, salt, and pepper for the dressing.
Pour dressing over the salad and toss gently to combine.
Top with crumbled feta cheese, if desired.
Notes
For extra flavor, marinate the chicken for at least 30 minutes.
Add other vegetables like bell peppers or spinach.
Adjust lemon juice and seasoning to your preference.
