Make a tender, protein-packed banana bread using Greek yogurt for moisture instead of butter or oil. This recipe is quick to prepare and results in a healthy loaf perfect for breakfast or snacks.

  • 3 large very ripe bananas, mashed
  • 1 cup plain Greek yogurt (full fat or 2%)
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup melted coconut oil or neutral vegetable oil
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Stir the Greek yogurt, brown sugar, granulated sugar, eggs, vanilla extract, and melted oil into the mashed bananas until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients. Mix only until the flour streaks disappear. Do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes

  • For the best texture, use bananas that are heavily spotted or almost black.
  • If you prefer a less sweet loaf, reduce the brown sugar by 2 tablespoons.
  • You can substitute whole wheat flour for up to half of the all-purpose flour for added fiber.
