4 (6 ounce) salmon fillets, skin on or off
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup unsalted butter
1/4 cup fresh lemon juice
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
Instructions
Preheat your grill to medium-high heat (about 400 degrees Fahrenheit). Clean and lightly oil the grates to prevent sticking.
Pat the salmon fillets dry with paper towels. Brush both sides lightly with olive oil and season with salt and pepper.
Place the salmon skin-side down on the hot grill grates. Grill for 4 to 6 minutes per side, depending on thickness, until the internal temperature reaches 145 degrees Fahrenheit and the fish flakes easily with a fork.
While the salmon grills, prepare the sauce. Melt the butter in a small saucepan over low heat.
Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not brown the garlic.
Remove the pan from the heat. Stir in the fresh lemon juice and chopped parsley.
Remove the grilled salmon from the grill and place it on serving plates. Spoon the warm lemon butter sauce generously over each fillet before serving.
Notes
For best results, use salmon fillets that are of uniform thickness.
If you prefer to avoid direct grilling, you can sear the salmon in a hot, oiled cast-iron skillet on the stovetop using the same heat and timing guidelines.
You can substitute dried herbs for fresh parsley, using 2 teaspoons dried.
