  • 1 pound large shrimp, peeled and deveined
  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped red onion
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Tear off four large pieces of aluminum foil, about 12×12 inches each.
  3. In a medium bowl, toss the shrimp, corn, bell pepper, and red onion with olive oil, chili powder, garlic powder, salt, and pepper.
  4. Divide the mixture evenly among the four foil pieces, placing it in the center of each.
  5. Bring the sides of the foil up and over the mixture, then crimp the edges tightly to create sealed packets.
  6. Place the foil packets directly on the grill grates.
  7. Grill for 10-12 minutes, or until the shrimp are pink and cooked through and the vegetables are tender.
  8. Carefully open the packets (watch for steam!) and serve immediately with lemon wedges.

Notes

  • You can add other vegetables like zucchini or cherry tomatoes.
  • For a spicier kick, add a pinch of cayenne pepper.
