1.5 lbs lean ground turkey (93% lean or higher)
1 cup fresh spinach, finely chopped
1/2 cup rolled oats (or almond flour for gluten-free)
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg, lightly beaten
1/4 cup low-sodium tomato sauce
1 tablespoon Worcestershire sauce (low sodium if available)
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Glaze: 1/4 cup ketchup (no sugar added), 1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard loaf pan or line a baking sheet with parchment paper for a free-form loaf.
In a large bowl, combine the chopped spinach, onion, garlic, egg, rolled oats, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined.
Add the ground turkey to the bowl. Use your hands to gently mix all ingredients until they are evenly distributed. Do not overmix, as this can make the meatloaf tough.
Shape the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
In a small bowl, whisk together the ketchup and apple cider vinegar for the glaze. Spread half of the glaze evenly over the top of the meatloaf.
Bake for 30 minutes. Remove the meatloaf from the oven, spread the remaining glaze over the top, and return it to the oven.
Continue baking for another 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
Remove from the oven and let the meatloaf rest in the pan for 10 minutes before slicing and serving.
Notes
To keep the meatloaf moist, the oats absorb liquid well. If your mixture seems too dry before baking, add one tablespoon of water or low-sodium broth.
For a low-carb binder, substitute the rolled oats with almond flour or crushed pork rinds.
You can bake this meatloaf free-form on a baking sheet instead of in a pan; this allows fat to drain away better.
Serve with roasted broccoli or a large green salad for a complete healthy meal.
