2 cups fresh strawberries, hulled and halved
2 cups granulated sugar
1 cup fresh lemon juice (about 4-6 lemons)
1 cup water
1 teaspoon lemon zest
Instructions
Combine the strawberries, sugar, and water in a medium saucepan.
Heat the mixture over medium heat, stirring until the sugar dissolves completely. Bring the mixture to a simmer.
Reduce the heat to low and let it simmer gently for 10 minutes, stirring occasionally, until the strawberries soften.
Remove the saucepan from the heat. Stir in the fresh lemon juice and lemon zest.
Pour the mixture through a fine-mesh sieve set over a bowl, pressing down on the solids with the back of a spoon to extract all the liquid. Discard the solids.
Allow the strained liquid (the concentrate) to cool completely to room temperature.
Transfer the cooled concentrate to an airtight container. Store it in the refrigerator.
To serve, mix 1 part concentrate with 2 to 3 parts cold water, depending on your preferred strength. Adjust with more water if needed.
Notes
For a longer shelf life, you can freeze the concentrate in ice cube trays or small freezer-safe containers.
If you prefer a smoother concentrate without any pulp, blend the cooked mixture before straining it.
Taste the concentrate before chilling; you can add a little more sugar if your lemons are very tart.
